A team competing for a fencing title after being blitzed by injuries and losing a slew of its top seniors would seem tantamount to attempting a crème brûlée recipe without eggs. But with the Great Neck North boys and girls teams holding 7-2 records in the Nassau County division, coach Stan Vaksman is proving to be quite the gourmet chef.
